Spicy miso tonkotsu ramen, Jinya

As the city preps for another trip through the polar vortex, this time with upwards of a foot of snow, we find ourselves looking longingly at photos from a recent lunch at Jinya. A Tokyo-by-way-of-LA import with aspirations of franchising around the world, this ramen bar specializes in tonkotsu ramen, a porky broth that wants to "establish a record for most umami per milligram." 

The spicy miso tonkotsu (above) succeeded, especially after the ground pork was swirled with the hefty tablespoon of chili paste. And the chicken wonton ramen ate like chicken noodle soup or matzoh ball soup, not a surprise given its version of chicken dumplings and chicken broth. Speaking of broth, both were incredibly rich, incredibly creamy, and incredibly silky. If the city's terrible chill has you trapped in the Village, this restaurant is a good option for thawing. Otherwise, wait to visit until you can leave the house without your face freezing.
